International Waffle Day

International Waffel day.

 

I had some sweet Potatos lying in my vegetable drawer in the fridge so I would have made some healthy and gluten free food waffles, but my crazy old waffle iron just got off here this Saturday.

So I had to try to make toast instead of.!

 

Ingredients .:

1-2 small Sweet Potatoes or just 1 big

2 eggs or 1-2 tbsp. With top Psyllium seed shells

½ dl/2½ cup of olive oil or melted coconut oil

Ca. ½ liter of vegetable ‘milk’

Ca. ½ liter of boullion water or the water from the potatoes

4dl/2 cup whole grain rice flour (can be replaced with gluten-free oatmeal)

(I’m sorry right here. But I can’t remember conversions from Liter to Gallion and I can’t find the conversion schedule, I’m really sorry)

2 dl/1 cup millet flour or gluten-free oatmeal (you can also use ordinary wheat flour with a high protein content of quite good quality)

1 tsp. baking soda

1 tsp. Turmeric.

Pinch of salt

Possibly. ¼ tsp. Vanilla powder (can be omitted)

 

How to dot it.:

 

Peel the potatoes and cut them into small cubes, and cook them until tender but not crumbly.
(You can also just bake them, in the oven if you prefer a slightly sweeter taste. Remember to add some olive oil over some spices and salt and pepper and whole garlic with shell as well)

Leave to cool, and put the potatoes and the rest of the ingredients in a food processor, and add a little at a time with the boullion water, as the “dough” may not be too thick and firm but preferably a little more liquid.

Then put the “dough” in a bowl,and cover with a little foil and put in the fridge and leave to stand, for at least 1 hour and preferably overnight.

If the “dough” has become too thick, add a little more vegetable ‘milk’ and stir.

Turn on the oven at 200 degrees Celsius / 293 Fahrenheit in conventional oven and 180 degrees Celsius / 356 Fahrenheit in hot air oven.
And spread some “waffle dumplings” on a baking sheet lined with baking paper and bake them in the oven for approx. 20 minutes, and then take them out of the oven and bake them in your waffle iron.

Then turn on the waffle iron and toss with coconut oil, on both sides and put the dough on and leave to bake, until done and golden.

Serve with whatever you just want to top with.
