Healthy waffles
I’m not the only one who is a Waffle fan, here in our relationship .. But his favorite stuff, can one suspect he is possibly “Pregnant” ?? I’ve asked him, but he just laughs and claims I’m “funny”.
But those traditional waffles that I got to eat as a child are not very satisfying or healthy. Although I am a huge fan of Belgian waffles with vanilla ice cream and lots of chocolate sauce on. So I got inspired by 2 Danish blogs, I have linked to their blog.
So here’s my version.
(I am still in training with regard to our number systems. I am currently running in the meter system, but must remember to use the other number system, especially with regard to the heat degrees. So please forgive me so far)
Ingredients (intended for 4 people)
250 grams / 1 pound cooked white beans (butter beans or soy beans)
Water on purpose approx. 5 dl / 1-2 cup maybe more.
1 -2 dl / ½-1 cup flaxseed “eggs” (vegetarian 1-2 large eggs)
1 small bowl of mixed frozen kale / spinach and broccoli, which must be thawed.
corn starch until it is connected, on purpose
a little oil if you have such a crazy old waffle iron like mine to brush with.
How to dot it:
Follow the directions, on the beans on the bag and cook them completely tender and blend them, along with the vegetable mixture.
Put it all in a bowl and then turn the flaxseed “eggs” into, and add the water and cornstarch until it seems like a firm mashed mixture, and leave it to cool for approx. 30-40 minutes.
Meanwhile, you can just turn on the waffle iron, and grab the dishes before you make these delicious waffles.
After 30-40 minutes, take the “dough” out of the refrigerator and then distribute the “dough” on the waffle iron.
(Remember to commute with a little oil on both the top and bottom of the waffle iron if you are equipped with an old day one like me).
Let them bake until golden and release the waffle iron.
Can be used nicely for the lunch or morning brunch, or as a substitute for oven-baked pancakes or something else.
So can be used both as, flatbread and for sandwiches with some topping topping ..
